What I want is a way to collect statistics in a privacy-preserving way. Performing the aggregation in a trusted and attested execution environment is one option. Cryptographic multi-party computation is another, though I don’t know if it’s practical.

Research on human subjects, especially when it will be used to make decisions about how to treat them, requires their consent. It's not about a risk of individually identifying them but that measurement of their actions may be used in ways contrary to their interests, and that they have a right not to participate in that.
