Any unscented un-moisturizing soap works I think. Slightly hippie stores make specific dish bars, but I’m happy with the big unscented bars of Dr Bronners.
Microbiologist here recently pointed out that soap is more directly damaging to more microbes than detergents are. That sounds like a good reason for soap to me!

@clew@ecoevo.social I tried Dr. Bronner's for dishes and was disappointed. I was looking for an all in one solution for boating and camping. It's especially important for boating because gray water is released right into the body of water you're in. Dr. Bronner's may clean skin, but it's terrible on hair and disappointing on dishes. At least that's what I think about it.🤷🏼♀️
