When I was in my first ISP job, a colleague spent some two or three weeks to create automation that would reproducibly create a mail server with postfix, dovecot, roundcube, and some amenities against spam and such. Today I spent around two hours to create mostly the same setup using docker-mailserver and the roundcube container image. It’s rough around the edges but fully workable. MOST of the time was spent figuring out why my Hetzner VMs could not reach port 25 of remote peers.
