Some of these are slighly gendered, but not critically so. I know people who call every boss and other who use babe all the time. Also if you're in the South, correcting someone is also fine (mostly in cities, if you're in a rural area I would just roll with it as to not cause a fuss). I used to work in customer service, and a "sir is fine" or "it's actually ma'am" works.
