Water absorbs the most energy per gram per delta-T because it has such a high specific heat capacity, but sugars and fats can heat up a LOT faster per joule absorbed because lower specific heat capacity. To this end, you gotta be careful when microwaving extremely sugary/fatty stuff in plastic containers.
