If you have to wait at a table for the person to go and get your product from a mysterious secure vault it increases the feeling you are getting something exceptional and valuable. Then they bring it already in a high quality carrier bag with the Apple logo on it, and that builds on the impression. I don't think they're going to change this anytime soon.
