With the salt, pepper, and third shaker thing, I like to believe there was just no widespread agreement on what the third default seasoning was, so they left it up to discretion.
You wanna put some paprika in there, go for it. You’d rather have ground parmesan, be our guest. Maybe some coffee, or straight cocaine. It’s your shaker.

I’m pretty sure they settled on it being mustard, which was super cheap and common
