OP issue with Ethernet might actually be related to Windows fast startup. And other than that, the issue OP is facing is pretty much not knowing what to choose in a plethora of options. Installing most modern distros nowadays is pretty damn easy, specially if you’re not trying to dual boot with Windows (which is also a Windows problem, not Linux).
